Pancakes for breakfast

I was craving for pancakes and we got our hands dirty and tried to make some of our own.
Here's the recipe:

Pancake mixture
1 cup milk
1 cup self raising flour
1 egg

For cooking
Butter or olive oil

For toppings
Extra butter
Golden syrup
Honey
Or any jams or fruits



Combine all the pancake mix ingredients together.

Heat a pan on low heat and add the butter covering the pan. Pour a scoopful of the pancake mix. Look for bubbling on top and flip when edges are brown.



Top with butter, syrup and other toppings to taste



For the first effort, it may not look like much but it tasted like pancakes!!

Hopefully it looks better next time.

Keeping the oils flowing

We've been frying a lot these days but using Extra virgin olive oil to do so.

Extra virgin olive oil is said to lower inflammatory markers in the blood, provide antioxidants like vitamin E and beta-carotene, decrease blood pressure and is linked to cancer prevention. Source

You are CORDIAL-ly invited

Most of the time, I drink water. When I'm out, it's either water or fresh orange juice, if you have it. As I like to say, I'd rather EAT my calories than drink it. With that said, there is something that made me change my mind.

Weekend dinner at home

With the parental units out for the weekend, SO's culinary prowess was put to test. This is what we had for tea.

Friday

Became this.....Lamp with mashed potato and mixed vegetables (carrots, peas and green beans)

Saturday
Breaded and cheesy Chicken breast with veggies






Sunday
MMMMM...more lamb chops with mashed potatoes, carrots and pumpkin




Not bad at all....SO gets the kitchen duties from now on!

All dishes were cooked in Extra Virgin Olive Oil and mixed vegetables were steamed.

Tuna sandwich version 1

For lunch, i made myself a tuna sandwich. I heart tuna.

Here is what I used: tuna in water, cheese, balsamic vinegar, mayonnaise, sweet chili sauce and horse radish (not in picture)



Butter the bread on one side and toast. Mix the tuna, horse radish with the mayo. Season with salt and pepper to taste. On the toast, sprinkle a little balsamic vinegar and spread the tuna mixture. Add the cheese and place another piece of the toasted bread. Cut in half and serve.

Chicken Curry Aussie style

We had creamy chicken and pumpkin curry for tea last night...It's Curry and Rice night...Aussie style!



Made with skinless chicken breast fillet and pumpkin, cooked first in olive then Continental Creamy Chicken Curry recipe base (diluted in water and milk) added in along peas and served with Basmati rice. Serves 4 and very filling.

It's a fairly easy recipe which was taken from the June 2011 issue of Better Homes and Gardens



You can replace the milk with coconut milk and add other vegetable like carrots and potatoes as well.

Grilled Kangaroo in Australia

When we say Australia, one of the first things that pops up in your head would be koalas and kangaroos.

The first kangaroo I saw during my last trip out here at Emu Ridge Eucalyptus and Craft Gallery

Meet Celine


She is an orphaned kangaroo adopted by the Turners.

And I brought us around this winter to see more kangaroos.


And we got to meet more kangaroos, up close and personal....




The Kangaroo meat was marinated and grilled. And no, it didn't taste like chicken! It tasted a bit gamey and is said to have little saturated fat and high in iron and zinc. Saturday snack

Spent Saturday afternoon at J's where we ate all day! Best way to spend the weekend, I must say!

Muchies we had to snack on..

A plateful of fruit (pears- high in vitamin C and mandarin oranges)...and a pack of Arnott's Tim tam in White chocolate...



which SO demolished in minutes!
